Ermionis Honey Vinegar 250ml
Ermionis Honey Vinegar
Crafted by fourth-generation apiarist Kosmas Bairaktaris and his family in Kranidi, a picturesque corner of the Peloponnese overlooking the Argolic Gulf, Ermionis Honey Vinegar is a truly unique expression of Greek beekeeping tradition.
Unlike conventional flavoured vinegars, this exceptional product begins with pure Greek wild herb honey. Through a slow, natural fermentation process, the honey is transformed into a beautifully balanced vinegar, creating a product that retains the complexity, aroma, and character of its floral origins.
Produced without preservatives, artificial colourings, or additives, Ermionis Honey Vinegar offers a rich, delicate acidity with layers of flavour that elevate both everyday cooking and gourmet creations. It is perfect for vinaigrettes, green salads, marinades, roasted vegetables, seafood dishes, and anywhere you would traditionally use vinegar.
What makes this vinegar truly special is its maturation process. After fermentation, it is carefully aged in oak barrels within the Bairaktaris family’s underground cellar, located on their historic farm, where the family has been keeping bees and working the land since 1914. This patient ageing process develops remarkable depth, smoothness, and complexity, resulting in a vinegar unlike any other.
A rare and innovative product that beautifully combines over a century of family beekeeping heritage with modern craftsmanship, Ermionis Honey Vinegar is a must-try for food lovers seeking something truly extraordinary.

About the Producers
For more than a century, the Bairaktaris family has dedicated their lives to the art of beekeeping. Their story began in 1914 in the beautiful region of Kranidi in the Peloponnese, where a passion for bees, nature, and traditional apiculture has been passed down through four generations. Today, the family continues that legacy through their award-winning Ermionis brand, producing exceptional honey and bee products that reflect the unique landscape of their homeland.
At the heart of the operation is fourth-generation apiarist Kosmas Bairaktaris and his family, who transformed generations of beekeeping knowledge into a dedicated honey enterprise in 2007. The following year, Ermionis was born, bringing the family’s pure and authentic honey to a wider audience while remaining true to the traditions that shaped them.
Their family farm overlooks the stunning bay of Kilada, where bees forage amongst wild herbs, thyme, olive trees, pomegranates, and carob trees. The farm is organically certified, and every product is created with a deep respect for the environment and the remarkable role bees play in the ecosystem. The family’s commitment to quality extends beyond honey production, with a Honey Museum established on the property to share their knowledge, heritage, and love of beekeeping with visitors from around the world.
Every jar of Ermionis honey is a reflection of four generations of dedication, preserving the flavours, traditions, and natural beauty of the Peloponnese for future generations to enjoy.
