Vermood Vermouth Bianco

Step into a world of flavour with Vermood Vermouth Bianco, a semi-sweet white vermouth that embodies the rich heritage of the Hahalis family. The journey of this unique vermouth began in 1939, when grandfather Panagiotis Hahalis first crafted an aromatic vermouth infused with the finest herbs from the picturesque island of Chios. As time progressed, the distillery moved to Patras, renowned for its exquisite Muscat grape varieties, allowing the legacy of quality and craftsmanship to thrive.

Today, the collaboration between the CASTRO – G.P. HAHALIS Distillery and expert bartender Argiris Oikonomakos has revitalised this classic recipe, imbuing it with a modern flair.

The result is Vermood where natural sweetness arises from the fine semi-sweet white wine made from Muscat grapes. This delightful concoction is expertly aromatised with artemisia, bergamot, and an array of Greek herbs, creating a complex yet harmonious flavour profile.

Crafted from 100% natural extracts, Vermood also features Greek honey, which enhances its distinct taste while maintaining an all-natural integrity—free from artificial colours or added sugars.

Serving Suggestions:

Enjoy Vermood slightly chilled at 12-13ºC for an exceptional aperitif experience. It can be savoured straight or on the rocks, but its versatility truly shines when used in cocktails.

Here are some pairing ideas:

Cocktail Base: Use Vermood as a base in classic cocktails such as Martinis or Spritzers, where its herbal notes complement the spirits beautifully.

Aperitif: Sip it as an aperitif alongside light appetisers like bruschetta, olives, or seafood dishes, enhancing the flavours of the meal.

Mixology: Experiment by mixing Vermood with tonic water or sparkling wine for a refreshing spritz, or combine it with fresh citrus juices to create vibrant cocktails.

Culinary Pairing: Drizzle over cheese platters, especially with soft cheeses like goat cheese or brie, to bring out the sweetness and herbaceous notes of the vermouth.

What makes Vermood Bianco stand out is its modern refinement—rich in floral, citrusy, and herbal notes, while staying true to the legacy of the original Hahalis recipe. The muscat wine gives it a vibrant and slightly fruity profile, which harmonises with the botanicals, delivering a refreshing yet complex flavour.

How to Serve:

Vermood Bianco is best enjoyed slightly chilled (12-13ºC) as an aperitif, served straight or over ice to fully appreciate its depth of flavor. It’s perfect for casual sipping but can also be a centerpiece in a variety of cocktails, adding a distinctive Greek touch to classics like a Negroni Bianco or a Vermood Spritz.

When it comes to pairing Vermood Bianco, its semi-sweet and aromatic profile offers a range of exciting culinary matches. The floral, honeyed sweetness of the muscat grape blends seamlessly with appetizers like prosciutto-wrapped melon, fresh oysters, or marinated olives. For cheese lovers, opt for soft, creamy varieties like burrata or fresh goat cheese, which balance the herbal notes.

In the cocktail realm, a Vermood Spritz or Negroni Bianco made with Vermood Bianco brings a refreshing zest. For desserts, it’s ideal with citrus tarts, baklava, or Greek yogurt with honey, where the wine’s fruity and herbaceous layers shine through.

With its versatile profile, Vermood Bianco transcends the traditional aperitif category, offering a luxurious, all-natural option for a range of drinking occasions, from casual gatherings to sophisticated cocktail hours.
