Named after the Greek word Hiotissa, meaning “a woman from Chios”, this handcrafted Chios souma celebrates the island’s women—their elegance, artistry, and strength—while capturing the essence of its land and sea.
Distilled from carefully sun-dried figs using traditional discontinuous copper still methods passed down through generations, Hiotissa is a sensory journey through the heritage, flavours, and beauty of Chios.

Cocktail Inspiration
Aegean Coasts Spritz
Refreshing, aromatic, and seaside-inspired.
Ingredients:
- 45ml Hiotissa, Chios Souma
- 15ml fresh lime juice
- 15ml herbal liqueur (e.g. Benedictine or Chartreuse)
- 60ml soda water or tonic
- Fresh thyme or rosemary sprig, to garnish
Method:
Build in a wine glass over ice. Add Hiotissa, lime juice and liqueur. Top with soda or tonic, stir gently, and garnish with herbs for an aromatic lift.
Fig & Cardamom Sour
Balancing fig sweetness with citrus and spice.
Ingredients
- 45ml Hiotissa, Chios Souma
- 22ml fresh lemon juice
- 15ml fig syrup (or muddled fresh fig)
- 7ml honey syrup
- 1 dash cardamom bitters (optional)
- Egg white or aquafaba (optional, for texture)
- Fresh fig slice or lemon twist, to garnish
Method
Dry shake all ingredients (without ice) if using egg white or aquafaba. Add ice and shake again. Strain into a chilled coupe glass. Garnish with fig slice or lemon twist.
Salty Coast Negroni
A coastal twist on the classic, with a saline finish.
Ingredients
- 30ml Hiotissa, Chios Souma
- 30ml dry vermouth
- 22ml Lazaris Aperitivo (lighter, fruit-forward) or 22ml Lazaris Bitter Rosso (for more depth)
- 2–3 drops saline solution (or a small pinch of sea salt)
- Lemon twist, to garnish
Method
Stir all ingredients with ice in a mixing glass. Strain into rocks glass over fresh ice. Garnish with a lemon twist.
