They love to call Nassitis the “alter-ego” of our SantoriniPDO wines. The presence of the island’s two lesser known varieties (Aidani and Athiri) add such freshness, without stealing the glory from the mineral full-bodied character of the wine.

The result is a tasty, versatile wine typical of Santorini, ideal for the long, warm summer days by the sea and nights under the stars.

Varietal Composition: 50% Assyrtiko 40% Athiri, and 10% Aidani Classification: Protected Geographical Indication Cyclades

Vinification & Elevage: The different grape varieties are harvested and fermented separately in steel tanks. Once fermentation is completed, blending takes place. After blending, the wine spends 6 months on the lees in the tank before bottling and release.

Nose: Aromas of white flowers, citrus, peach, salt and banana

Taste: Balanced acidity, medium bodied, creamy ,minerality, citrus, peach, elegant after-taste.

Pairing Suggestions: This is an all-day wine that can be enjoyed on its own or paired with sea-food, salads and vegetable-based dishes, white meat and creamy sauces.

About the Winery 

In the midst of the 2010 Greek financial crisis, Yannis Valambous traded his successful career as an economist in London to return to Greece. Motivated by a love for wine and childhood memories on Santorini, he embarked on a venture to revive the vineyards passed down by his father.

Surveying the vines, Yannis envisioned crafting exceptional wines that not only showcased Santorini's grapes but also preserved the island's winemaking legacy. Assembling a dedicated team, including Elias Roussakis and Yannis Papaeconomou, they shared a common goal – proving Santorini's ability to produce world-class wines.

Transforming a plot into a modern boutique winery, Vassaltis emerged in 2014. The visionary move by Yannis Valambous's father, Vassilis Valambous, in acquiring Santorini vineyards, set the stage for the realization of a dream, whether as an investment or legacy.

Vassaltis embodies a philosophy, "LOGOS," rooted in traditional yet sustainable evolution. It acknowledges the ever-evolving nature of viticulture and winemaking, drawing inspiration from ancient techniques while embracing innovation.

Their approach to wine, "PATHOS," reflects a profound passion for Santorini and its wines. True to the terroir, Vassaltis wines balance finesse and are crafted for immediate enjoyment, with innovation in the vineyard and winery challenging conventional norms.

The ethos of Vassaltis revolves around passing the winemaking tradition with integrity and honesty. Integrity is non-negotiable, extending to both wine and interpersonal relationships, fostering a constructive work atmosphere and fair dealings with suppliers, clients, and colleagues.

Leading the charge is Yannis Valambous, dedicating himself to Vassaltis's daily operations. Oenologists Yannis Papaeconomou and Elias Roussakis contribute creativity and expertise, ensuring the wines meet the highest standards. Maria Papida, Kiriaki Katsipi, and Artemis Kardoula contribute to various aspects, creating a dynamic and passionate team.

The Vassaltis Winery is a blend of tradition and modernity. The architectural design, inspired by Santorini's elements, integrates seamlessly with the environment. The winery's philosophy of minimalism and functionality is evident in its structure, incorporating large glass surfaces for natural light and panoramic views.

Santorini, with its rich viticultural history, is a unique terroir for Vassaltis. The island's ungrafted vines, indigenous grape varieties like Assyrtiko, Mandilaria, Aidani, and Mavrotragano, and the age-old techniques like kouloura vine weaving contribute to the distinctive character of Vassaltis wines.
