About the Author
Embark on a journey through the life and culinary evolution of Stelios Parliaros, a maestro of Greek confectionery. Born in Istanbul amidst a tapestry of butters, syrups, baklavas, and kadaifs, Parliaros' early years were marked by a fascination with the world beyond the confines of school walls.
At the tender age of 18, fate led him to Papaspyrou confectionery, where he discovered his passion for the craft. This passion propelled him to iconic establishments like the Hilton hotel and on a quest to Paris, where he honed his skills at prestigious institutions such as École Lenôtre, the Ritz Hotel's Escoffier School, and the Valrhona School in Lyon.
Armed with inspiration from his travels and a dedication to using fresh, quality ingredients, Parliaros unveiled Fresh, a pastry shop in Kolonaki, at the youthful age of 23. His creations, characterized by clean flavours and elegant simplicity, quickly captivated the hearts and palates of Athenians.
Throughout the 1980s, Parliaros continued to push boundaries with his innovative pastry shops, each a testament to his impeccable taste and aesthetic sensibility. In 2000, he ventured to the renowned Fauchon pastry shop in Paris, further refining his artistry.
However, it was in 2004 that Parliaros embarked on a new chapter, retiring from pastry shops to focus on sharing his knowledge through the written word and teaching. His dream of imparting pastry classes became a reality, as did his foray into television with the beloved show 'Sweet Alchemies,' which captivated audiences for an impressive 13 years.
The 'Sweet Alchemies' brand flourished beyond the screen, manifesting in a pastry shop in Kolonaki and the first pastry magazine in Greece, bearing Parliaros' unmistakable touch and published by the esteemed newspaper 'I KATHIMERINI.'
