Steeped in history, Zivania (or Zivana) is a treasured Cypriot spirit whose origins trace back centuries. Even Homer’s Odyssey references Zivanon, a drink enjoyed by the Cyclops. In the Cypriot dialect, Zivana refers to the grape pomace—pulp, peels, stalks, and seeds—left over from the winemaking process, which is then distilled to create this distinctive spirit.  

This Zivania is crafted using a blend of Mavro (red) and Xynisteri (white) grape varieties, meticulously distilled and aged for at least one year to develop its exceptional flavour and aroma. Traditionally, mature Zivania was reserved for special occasions like weddings and celebrations, prized for the rich, nuanced profile it acquires over time.

Nose: Fruity, and aromatic.

Taste: A fruity and raisin-sweet beginning gives way to an explosion of warmer flavours featuring more tannin aromatics introduced by the red grape variety influence. It’s a perfectly balanced fruity brandy with a body and a smooth finish, a wonderfully balanced aperitif for all occasions!

Finish: Surprisingly long for a grape pomace brandy.

The Aristides Distilling Journey

The story of Aristides Distilling begins not in Cyprus, but in the rolling hills of the Ozark Mountains in southern Missouri. Around 2008, co-founder Aris Aristidou joined forces with Jim Blansit to establish the first craft distillery in the Ozarks since Prohibition. Their passion and dedication quickly earned recognition, landing them **three prestigious spirit awards** from the American Distilling Institute. In 2013, Aris and Jim were joined by co-founder Marianna Ktoridou Aristidou, who helped expand the distillery’s success, distributing an impressive range of whiskeys and rums across the state.  

In 2016, Aris and Marianna returned to Cyprus, ready to bring their expertise home and embark on an exciting new chapter. After two years of meticulous research, planning, and overcoming challenges, Aristides Distilling came to life in early 2019, officially beginning operations on January 1, 2020.
