We sat down with Sophia for a little Q&A

How did it feel to bring Avli back to Penrith, this time in the form of a food truck?

It has been extremely rewarding and nostalgic to bring Avli back to Penrith. Returning to a community that already knows and loves our food, but in a new, mobile format, felt like a fresh start while still honouring the legacy of the original restaurant. The excitement of reconnecting with familiar faces and introducing our cuisine to new customers has been a highlight. Bringing the flavours and atmosphere of Avli to different parts of Penrith allows us to create a sense of continuity while embracing the flexibility and creativity that a food truck offers.

What was the inspiration behind launching the Avli Eats food truck?
The idea of launching Avli as a food truck happened by chance when we were asked to do a pop-up at a local brewery in Penrith. Our customers thought we had returned permanently, and that’s when we realized Avli Eats could be a way to continue our culinary passion, connect with our community, and bring a beloved dining experience to a wider audience in a new and exciting way.

How did your experience at the Penrith Paceway compare to your days at the restaurant?
It was a mix of unique challenges and opportunities. It gave us the chance to engage with our community in a different setting and adapt with a fresh perspective.

What challenges did you face transitioning from a brick-and-mortar restaurant to a food truck?
One of the hardest parts was simplifying our menu. There are so many Greek favourites we want to offer and deciding what to include took time and careful thought.



What are your future plans for Avli Eats? Will you be attending more events around Sydney?
Yes, we plan on attending more events around Sydney. The vibrant food scene here offers numerous opportunities to showcase our Greek cuisine at festivals, markets, and private events. It’s a wonderful way to reach new audiences and build a broader customer base.

What’s your favourite Greek meal to cook at home?
One of my favourites is moussaka. It's a bit of a project to make, but the layers of eggplant, spiced meat, and creamy béchamel make it so comforting and worth the effort!

What are three Greek staples you always have in your pantry?
Olive oil, dried oregano, and feta cheese. They’re essentials for so many Greek dishes, especially salads and meats.

Do you have a favourite Greek dessert that you love to enjoy after a big meal?
Galaktoboureko. It's a rich dessert with layers of crispy phyllo, custard filling, and a light citrus syrup. Perfectly sweet and zesty!

If you could visit any place in Greece right now, where would it be and why?
Halkidiki. It’s a hidden gem that offers a perfect blend of natural beauty, rich history, and vibrant culture.

What’s one thing you miss most about running the restaurant?
I miss the vibrant, bustling atmosphere and the sense of community it created. The energy during service, working with a passionate team, and seeing guests enjoy their meals made it all incredibly rewarding.
