We sat down with Mary for a Q&A

Your Instagram feed is full of delicious Greek recipes and beautiful food photography. What inspired you to start sharing your culinary creations online?

Mary’s Kouzina was created in 2016. At that time I was a fresh newlywed absolutely excited about having my own brand new kitchen to cook in. I had so much cooking experience up my sleeve thanks to my mother and Yiayia. I was excited to come home after a long day of teaching my high school students and cook the delicious Greek food I grew up on (and also be a little adventurous with foods we didn’t always eat at home, too). In December of 2016, I decided I wanted to share the delicious food I was creating at home, the numerous dishes I learnt by simply observing my mother my whole life, just by taking a simple picture and documenting the recipe. The feedback was amazing, suddenly Mary’s Kouzina became a place for Greeks and lovers of Greece to enjoy the nostalgic flavours from Yiayias kitchen or revisit a flavour experience from a recent or long ago holiday. Today, Mary’s Kouzina is committed to ongoing preservation of Greek cuisine. I feel a responsibility that as a first generation Greek and daughter of the diaspora, that if I have this knowledge, I must pass it onto my children and anyone else’s who share the same vision.

Your handpainted tea towels are a unique addition to your brand. What made you incorporate your love for Greek cuisine into these products?

Art has always been a significant part of my life. As a child and young adult, if I wasn’t cooking, I was painting, if I wasn’t painting, I was drawing or creating ceramics. Spending hours and hours in my art studio. Everything I do and feel within, is translated through my hands. Whether that’s a meal or a watercolour painting. If I’m not creating, I’m lost and going crazy!

Mary’s Kouzina has always been a place I can express my creativity through food and what better way than to combine my love for art with illustrated recipe tea towels that are not only convenient for everyone, but are sentimental, and special keepsakes for our future generations. It’s a beautiful way to preserve recipes!

What’s one recipe from your collection that you think everyone should try at least once?

Melomakarona. Honey walnut biscuits. I don’t know why I don’t make them more regularly. But I suppose knowing that they are in fact a special part of Christmas, makes them that little bit more special. I always look forward to making them at the end of every year!

Greece is full of stunning locations. What’s your absolute favourite place to visit, and what makes it so special to you?

Crete will always hold a special place in my heart. I associate so much of it with my Yiayia Maria, who till this day reminisces of her life there to me. It’s a magical island, so rich and unique in history and gastronomy.  Corfu, is another island I am in love with. Its Venetian influence is just spectacular. We always travel and revisit Corfu every chance we get.

Can you share a secret spot in Greece that’s off the beaten path but perfect for a peaceful getaway or a unique culinary experience?

Ntounias in Crete. An educational farm dedicated to the expressing and presenting to its visitors the beautiful reality of what living in the Greek countryside involves. Ie. cooking with wood fire, and cooking only with the ingredients available to you agriculturally.

What’s a place in Greece that surprised you with its beauty or charm, and how did it inspire your cooking and content?

Without a doubt, the island of Crete. When I first visited, it wasn’t “a glamourous holiday in Greece”. It was humble, being with family in the village, and observing their way of life experience. Watching my Thio Yianni return home from the farm in the late evening, strapped with a huge drum almost the same size as me on his back filled with goats milk. And visiting my Thia Despina’s house with cloths of Myzithra hanging from tree branches. What a delicious and special site! This is the Greece that I live visiting!

How do these special places in Greece influence the recipes and content you share?

For me it’s all about connection, and remembrance. I love recreating meals I ate at a specific time or place in Greece. Simply picking a fig off of a tree here in Australia can fill my brain with so much dopamine, because it takes me back to a place I’m in love with. And that’s what I believe traditional Greek recipes do for all of us. They transport us back to a special place, a a core memory, or remind us of our loved ones.

Your new YouTube channel is a fantastic extension of your social media. What has been the most exciting part of transitioning from written recipes to video content, and how has this new format changed the way you connect with your audience?

Thank you! It has been very exciting and such a wonderful new experience. Going from one end of the spectrum to the other was very challenging during the first half of the experience. Luckily, I have an amazing and supportive team who know me quite well already, therefore the process has been fun with lots of laughs, and hilarious outtakes. I’m terms of how I connect with my audience, I’ve loved the fact that I now have the ability to go in depth detail with my recipes, show better examples of how to do certain things, such as bake a perfect Tsoureki. But also, give my very supportive audience a more intimate look into my world of cooking at home. 

What are your go-to Greek pantry staples that you always have on hand?

Always, Greek extra virgin olive oil, oregano, and cinnamon (fun fact, I buy it by the kilogram). Kritharaki is always a must, and I absolutely love my Greek coffee and tea.

What are your favourite products from Greek Providore that you’ve tried?

Okay, we’re going to be here a while. 

It’s Greek Oregano - BEST! Nothing compares. Ladolea red wine vinegar with bergamot, absolutely delicious. I really love a lot of your teas, Anassa, Sarantantabotano, and Anthea. They’re all such beautiful herbal combinations. The Nutlers Pistachio butter is my one and only. I use it in all my pistachio desserts. Marmeliza - apple and cinnamon jam, I’ve never loved a jam so much.  Black garlic ketchup, umami! Sauce a delicious condiment. Food Cross honey, exceptional thyme honey and their pasteli is amazing. Perfectly chewy and sticky, just now I love it! Lemonodasos, so refreshing. For alcohol, Lazaris cream limoncello and cumquat, my goodness they’re deliciously amazing! Manousakis Tsikoudia, the smell of Crete! Kleos mastica, such a delicious smooth mastica, I not only enjoy sipping it, but mix in cocktails and desserts. Should I keep going?
