Lagana Bread & Sarakosti: A Taste of Greek Clean Monday Traditions

As Greece bids farewell to the indulgence of Apokries (Carnival season), a new chapter begins—Clean Monday (Καθαρά Δευτέρα), marking the start of Sarakosti (Σαρακοστή), the 40-day period of fasting leading up to Easter. This day is not just about spiritual reflection but also about food, tradition, and community, with one staple at the heart of the celebration: Lagana bread. 

Lagana: The Bread of Clean Monday 
Lagana (λαγάνα) is a traditional unleavened bread, baked only once a year on Clean Monday. This crispy, sesame-covered flatbread dates back to ancient times, with roots in biblical references to unleavened bread. While today some variations include yeast, the classic version remains a symbol of purity and simplicity, fitting for the beginning of Lent.  

Sarakosti & The Clean Monday Feast
Clean Monday is a day when Greek families gather outdoors, fly kites, and enjoy a meat-free, dairy-free, and egg-free feast, following the fasting rules of Sarakosti. The table is filled with delicious plant-based and seafood dishes, proving that Lenten food is anything but boring!  

Traditional Clean Monday Foods

Lagana Bread- The star of the table, perfect for dipping and pairing with Lenten delicacies.  

Seafood Delights – Since shellfish and molluscs are permitted during fasting, dishes like grilled octopus, calamari, mussels, and prawns are favourites.  

Taramosalata – A creamy yet dairy-free dip made from fish roe, olive oil, lemon, and bread or potato, served generously with lagana.  

Fasolada– A bean soup, often called Greece’s national dish, is a staple throughout Lent.  

Melitzanosalata & Other Dips – Eggplant dip, tahini-based spreads, and fava puree (yellow split pea dip) are Clean Monday essentials.  

Olives & Pickled Vegetables – These salty, tangy bites add a burst of flavour to the meal.  

Halva – A sweet, tahini-based dessert that’s a must-have for Sarakosti, offering a satisfying end to the meal.
